This easy Mexican-Inspired Chicken Soup Recipe makes a great healthy weeknight dinner! It's great for feeding a crowd quickly & easily. Plus it's: gluten-free dairy-free & easy to prep I use the Instant Pot to save time on busy weeks (or anytime I don't really feel like cooking).

Using the sauté function of an electric pressure cooker, sauté the onion in oil until soft. 


Add the rest of your ingredients to the pot (except the chicken breasts and the frozen corn) and stir until well combined.


Add in the chicken breasts & frozen corn (if using) being careful not to go over the fill line.


Seal and pressure cook on high for 5 minutes. When done let natural release for 10-15 minutes.


Remove the chicken breasts from the pot & shred between two forks. Return to the pot and stir until combined. Serve hot & enjoy!
